Beetroot Stir Fry / Beetroot poriyal

Beetroot is good for health. As a matter of fact all vegetables are good for health as long as the recipe doesnt call for deep frying. Vegetables are a must in our house even if its with any non vegetarian meals – lunch especially. So usually its a fish on the side most days of the week with any stir fried vegetables dearly called poriyals, or vegetable curries (dearly called kootu, off course) and salads depending on whats available. This is a simple side dish that is served as an accompaniment to rice.

 

Recipe

Serves : 3

Oil : 2 tsp

Mustard : 1/2 tsp

Urad Dal (whole) : 2 tsp

Curry leaves : few

Onion : 1 small

Red Chillies : 2 Broken

Beetroot : 2 Medium, grated medium

Coconut (grated) : 2 tbsp

 

Heat oil in a pan, add the mustard. Wait for it to splutter.

Add urad dal, wait for it to turn brown.

Now add the onions, red chillies and curry leaves

Saute for about 2 minutes 

Finally add the beetroot.

Reduce the heat to low. Cover and cook for about 3-4 minutes

The beetroot should be cooked in its own steam

Add Salt to taste. Sprinkle with coconut and serve.
