Fish Fry with Indian spices /Snook fish fry

This is a easy fish fry with the usual Indian spices shallow fried to perfection. Snook is the smaller version of the Barracuda. It has one center bone running through to its tail with small bones on either sides of the finger.The local supermarkets have fish filleted but the choice of fish is limited. We bought this fish at a local fish store in Findon and below is a recipe for the same

 

Recipe

Fish : 500 gm Snook Sliced (Or you could use any fish)

Turmeric: 1/2 tsp

Red Chilli powder : 3/4 tsp

Kashmiri chilli powder : 1/2 tsp (optional)

Coriander powder : 1/2 tsp

Tamarind pulp : 3 tsp

Curry leaves : few

Salt to taste

Oil : 1/2 cup for shallow frying

 

Marinate the cleaned fish with the above spice powders, curry leaves and tamarind pulp with salt

Keep aside for 30-45 mins

Heat oil in a pan , shallow fry the fish pieces on low medium for about 2-3 mins on each side. 

 

 

Notes :

Fish must be cooked through to have a soft texture.If you cook the fish longer it will taste rubbery and lose the texture.
