Ghee Rice is a go to recipe for easy Sunday Lunches, get togethers, potluck dinners at Church and pairs well with any gravy, mainly mutton or chicken :).Ok, the last part was just my personal preference. Recipe
Serves : 4
Must Haves : Basmati rice, Coconut Milk, Whole spices
Onion : 1 Large thinly Sliced
Ginger garlic paste : 1tsp
Green Chilli : 1 Slit
Basmati Rice : 400 gms /2 Cups – measuring cup 200 ml
Coconut Milk : 1 Cup
Water : 2.5 Cups
Ghee /clarified butter : 2 Tsp
Oil : 1 Tbsp
Salt 3/4 tsp
Whole Spices :
Cardamom 3 (slighly crushed)
Star Anise 1
Bay leaf 1
Cinnamon Stick 2
Cloves : 4
Wash the basmati rice and let it soak in water for about 45 mins
Thinly Slice the Onions and separate them. The thickness of the onions is very important while caramelising them
In a pressure pan or a wide bottomed nonstick pan heat oil and the ghee/clarified butter
Once hot add the thinly sliced onions till they turn brown. Its a slow process but eventually they will turn brown but be careful not to burn it as it will turn bitter. Remove from oil and set aside
To the same pan , add the whole spices, and after about 30 seconds, add the ginger garlic paste and green chilli. Cook for about another minute.
To this add the water as well as the coconut milk (I used the milk from a can)
When it boils add the water and the drained rice
Close the cooker and let it cook on medium low for 2 Whistles. Approx 8 minutes
Remove from heat and serve hot.
Garnish with onions , cashew and raisin roasted in 1/2 tsp ghee.
Notes :
Adding onion, Cashew and Raisin is optional
Ensure you do not burn the onion as it will turn bitter and spoil the taste.
