Poriyals are very simple at home. Most of them are just tempered, cooked just right and served as sides.When you have left over veggies like a carrot or a few beans, 1/4 of a cabbage, just chop them all up, toss them and voila you have a new nutritious veggie for a side dish. Its a very simple dish and can be fixed in a few minutes
Recipe :
Serves : 3
Oil : 2 tsp
Mustard : 1/2 tsp
Urad Dal whole : 2 tsp
Onion : 1, small , Chopped
Red Chilli : 2 Broken
Curry Leaves : few
Cabbage : 1 small or 1/4 Medium Cabbage
Carrot : 2 Small
Coconut : 1/4 cup
Method:
Finely Chop carrots and cabbage and keep aside
Heat a pan, add oil
Once hot, add the mustard wait for it to crackle.
Add the urad dal, when it turns golden brown add the onions and curry leaves
Add 1/4 tsp salt to quicken the onion cooking process.
Add the chopped veggies, Saute for a minute.
Add 1 tbsp water, cover with lid and let it cook on Low.
After 5 minutes, give another stir, to make sure theres no water in the pan. If there increase the heat for the water to evaporate .
Sprinkle coconut fresh or frozen, Cover and remove from heat. Serve.
