This was a recipe that was quite popular in the baking world for sometime. Rasa Malaysia is a great site for good Chinese dishes. I have tried this recipe in the past and its a versatile recipe that you get both the richness of a brownie and the deliciousness of the butter cake in one . If you are craving for brownie and have thoughts of making a butter cake then this cake is what you must be going for.I have made this cake for potlucks when guests visit and never disappoints. I made some minor changes to the recipe by adding almond meal to get a great brownie base. You can opt out if you don’t have it and use plain flour instead. I have made it using muscles and whisks and no fancy equipment so you could try and enjoy the results as well. Here’s the recipe

Serves : 10-12
For the brownie
Dark Chocolate/ Cadburys melts/Morde : 140 gms (Chopped)
Butter : 50 gm
Egg 1
Brown Sugar : 50 gms
Almond meal/flour : 15 gm (Optional)
For the butter cake
Butter : 120 gm
Eggs : 2
Sugar : 80 gms (powdered or fine)
Self Raising Flour : 125 gm (Or 125 gm plain flour + 1/2 tsp baking powder sieved)
Milk : 50ml or 3 tbsp
Vanilla extract: 1 tsp
Method
Preheat the oven to 175 C
Grease and flour a loaf tin 8.5 in x 5in or 2 x (7 in x 4in) pans. I used the latter
Melt the chocolate and the butter over Bain marie (refer notes)
Once completely melted, remove off heat and let cool for sometime, add the brown sugar , mix well and then add the egg. Once the egg is completely beaten into the mixture add the flour
Pour into the prepared loaf/cake pans
Now keep in the oven for about 12-13 mins. You will need to just set the bottom layer and it must be almost seem 3/4 th done
For the butter cake :
While the pan is in the oven, cream the butter and sugar for the butter cake
Once the sugar is dissolved and creamed, add the vanilla
Then add the eggs one at a time . Beating continuously with a whisk.
Now add the self raising flour or the All Purpose flour and baking powder mix,
Stop the beating/creaming method and Using a spatula gently fold into the butter mixture
Alternate with the milk
When the brownie layer has just set, remove and quickly pour into the pan.
Put it back into the oven and after about 25- 30 mins the cake should be done.
Use a skewer/toothpick to check if there are no crumbs/liquid sticking.
Remove and cool for about 5-7 mins. Gently turn over to release from the pan
Notes :
Bain marie is a water bath where a smaller pot with water is heated to boiling point and a larger pot with the ingredients is used to melt. This method is slow and the trapped steam is used to melt the butter and the chocolate in this recipe.
