Chicken Kebab and a Quick Sandwich

I didn’t have the skewers to make the kebabs yet I been wanting to make these. These were made on the stove top on a cast iron pan and then served with lettuce wraps and then loaded between slices of bread for a quick sandwich. Sometimes you run out of ideas, you do with what you have in hand. This is one such recipe. The filling for the sandwich may be a bit dry and you could always use mayonnaise. I skipped it since the kebabs and the tomatoes were juicy enough

Recipe

For the Kebab:

Curd : 2 tsp

Chicken mince : 250 gms

Garam masala powder : 1/2 – 3/4 tsp

Nutmeg : 1/4 tsp

Green Chillies : 2 finely chopped (I deseeded)

Almond powder : 2 tsp ( if you have 7-8 blanched almonds pulse them in the mixer)

Coriander leaves : 2 tsp finely chopped 

Mint leaves : 2 tsp finely chopped

Onions : 1 small very finely chopped (I used 2 shallots)

Lemon juice : 1 tsp

Salt: to taste

Method :

Mix all the above in a bowl. Keep aside

Heat up a cast iron pan well so that it gets very hot

Slightly flatten the meat mixture on your hands and transfer to the pan

Use water to prevent sticking to your hands

After about 3 minutes, flip and cook further for 2 more minutes

Overcooking the kebabs will result in denser/rubbery kebabs

Repeat the procedure till the meat mixture is used up. Keep aside

 

For the Sandwich

Makes : 2

Sandwich Bread slices : 4

Lettuce : 1 each for a bread

Butter : 1 tsp 

Onions rings : 3-4

Tomato sliced : 2-3

Mayonnaise : 1 tsp (You could also used thick yoghurt for a healthier version), I didnt use any

Slightly butter the bread slices. 

Arrange the lettuce as well as the onion and tomatoes along with the kebabs and you’re done. Serve as desired

 

NOTES :

I have cooked in a cast iron pan and theres no oil used while frying. You can use a non stick pan or use a little oil to grill these on the stove top
