My Mom is great cook. The more I age, the more I appreciate her cooking. There have been times, maybe a couple of decades ago when cookery shows were aired with such rarity that we as a family used to sit together off course with my dear Aunt and cousin Nitin, pass judgmental remarks at how awesome the cook was or a mess they were and depending on what was dished out on the plate we tell each other whether we could try or just dump the recipe. My dear Amma on the other hand would do a quick stock-take of her pantry and if all the ingredients were available, would push us to try the recipe. She’s quite adventurous that way. There are still many diaries, scribbling pads of hand written recipes with each of us. With the internet age, there’s access to a treasury of recipes from around the world yet the hand written diary of recipes are priceless! That said, a month or so ago Amma told me about a recipe she tried off a TV show. Its a very simple recipe with loads of vegetables seasoned with flours and fried to a golden crisp. Can be a quick snack or appetizer.
Recipe:
Vegetables : 100gm each of potatoes, cauliflower, beans, carrots, ladies finger , julienned and cut to about 1 inch pieces
Onions : 1 medium, diced
Capsicum : Red or Green 100 gms (optional)
Cornflour : 1 tbsp
All purpose flour : 1 tbsp + 1 tsp (divided)
Rice Flour : 1 tbsp + 1 tsp (divided)
Chickpea flour/besan : 1 tbsp + 1 tsp (divided)
Turmeric : 1/4 tsp
Salt : 3/4 tsp
Chilli powder : 1/2 tsp – 1 tsp ( according to the desired spiciness)
Curry leaves : few
Coriander leaves : few
Oil to deep fry
Method:
Add all the vegetables to the mixed flours. Add about 2 tbsp water and then sprinkle to see if the vegetables are wet. The batter should NOT be loose
Add curry leaves and coriander
Add another 1/2 tsp of all the flours except corn flour before frying.
Deep fry in hot oil on medium heat till cooked through and golden brown
Serve Hot.
