Karamani Poriyal/Yardlong Beans Stirfry

The Yardlong beans was available at the local market and although I have not liked them as a kid, I have taken a liking to this vegetable of late. Cluster beans is another story :).Its a simple poriyal and easy to make.

Recipe

Yardlong beans : 1 bunch (approx 250-300gm)

Onion : 1 finely chopped

Coconut : 3-4 tbsp

Cumin/jeera : 1/2 tsp

Turmeric : 1/4 tsp optional

Green Chilli : 1 small

Garlic : 1 clove

Red chillies : 2, broken

Mustard : 1/2 tsp

Oil : 2 tsp

 

Method :

Add the coconut, green chilli, cumin to a blender jar and pulse it thrice.

Heat up oil in a pan and add the mustard. Allow to splutter

Add the red chillies as well as the urad dal wait for the dal to turn brown

Now add the onions, curry leaves and the finely chopped beans

Saute for a minute and then cover pan with lid on low heat and let it cook for 5 minutes

Halfway through add the crushed coconut mixture and a tbsp water.

Cover with lid and cook further for 3-4 minutes

Serve with rice as an accompaniment.
