This is a quick potato stir fry/poriyal. Pairs well with Dals and the humble Rasam. Because it is easy and quick it can come in handy for lunch boxes. Mildly spiced, makes a great dish for toddlers and young kids.
Recipe:
Potatoes : 3 medium Boiled and Mashed
Onion : 1 medium, finely chopped
Ginger : 1 inch, grated
Green Chillies : 2, chopped
To Temper :
Oil : 1 tbsp
Mustard : 1/2 tsp
Urad Dhal : 1 tsp
Channa Dal/ Kadalai Paruppu : 1/2 tsp
Curry leaves : 1 sprig
Heat up oil in a pan and add the dals, mustard and wait for it to turn brown
Add the green chillies, ginger
Add the onions, saute till its softened
Add the mashed potato, and season with Salt.
Toss so the flavours are mixed through.
Serve with rice.
