When you have spinach that needs to be used up and running out of ideas yet need to make it quick and easy, then keerai sambar it is. Its very similar to the Lentil and Spinach curry except that we’ll be using Sambar powder.

Serves : 4 to 5
Moong Dal : 3/4 cup
Carrot : 1 medium, chopped
Beans : 5 to 6. de-string and chopped
Spinach : 6 large leaves or a small bunch
To temper:
Oil : 2tsp
Red Chillies
Garlic : 2 medium finely chopped
Ginger : 1/4 inch finely chopped
Tomatoes : 2 medium chopped
Turmeric powder : 1/2 tsp
Coriander leaves : few to garnish
Sambar powder : 2 tsp, Store bought (I used Sakthi sambar powder)
Salt : to taste
Soak Dal for 20 mins
In a pressure pan, add the Dal,chopped spinach, carrots and beans. Add enough water to immerse Pressure cook for 3 whistles
In a pan heat 2tsp oil add mustard, red chillies, ginger, garlic and curry leaves
Saute for about 20 seconds making sure you dont burn
Add chopped tomatoes, turmeric powder, saute till tomatoes turn mushy about 4-5 mins
Now, add the sambar powder give a stir and add the cooked dal. Keep stirring. Add enough water and let it come to a boil.
Add salt to taste
Add coriander leaves to garnish and a tsp ghee(clarified butter) for extra flavour
Serve with idli/dosa/pongal/rice. Enjoy!
