I can think of 3 things when it comes to Salads just like I have about the other recipes. FRESH. HEALTHY. EASY. My sister tells me I should go on Salads for Dinner as it is very light on the tummy and good for me. I am a person who likes others to plate it for me if its something healthy. I will happily clean up the plate. But to cook up something for me is something I am not keen on doing. One of my dear friend and ex-colleague Selwyn brought this salad for lunch. I happily munched away. Poor fella he was left to eating his rice minus this salad. š I told ya, I like others to do the good stuff for me. I am planning to chop up the veggies for a day or 2 and store them up so all thats needed is mix them up, toss them and then its yum in my happy tum! This blog has just kicked off and I have shared it with my good old school classies. And one of them Santosh has requested for salads exquisitely on the site. Here, this is for you
RecipeĀ
Cucumber : 1 Med Chopped
Onion : 1 small, chopped
Tomato : 1 Small, deseeded and chopped
Groundnuts : Boiled , Ā 1/4 cup
Apple : 1/2 Large chopped
Pomegranate : 1/4 cup
DressingĀ
Lemon juice : 2 tsp
Olive oil : 1/2 tsp
Pepper : freshly milled 1/2 tsp (original recipe called for 1/2 tsp chilli powder)
Sugar : a pinch
Salt : 1/2 tsp
Chop up all the vegetables andĀ Toss them in a bowl
Mix all the ingredients listed under dressing
Dress up the salad , toss it all together
Top it with pomegranate (I didnt have pomegranate) Enjoy!
