Cinnamon Rolls

These are soft fluffy rolls and can be tried if you’re a beginner with yeast. The warm smell of cinnamon wafting while in the oven can turn your home into a inviting cozy bakery. As a matter of fact any bread baking can, cinnamon just amplifies it. I have tried this recipe a few times before and has never let me down. I have altered the recipe a bit. You could also try adding nuts/raisins of your choice to the filling. Don’t skimp on the sugars, the brown sugar adds a nutty flavour yet the sweetness is not overpowering.

Recipe :

All-purpose flour/maida : 2 and 3/4 cups (345g) (measured correctly)
Sugar : 3 Tbsp + 2 tsp
Salt : 1 tsp
Instant yeast : 2 1/4 tsp (1 packet = 2 and 1/4 teaspoons)
Water : 1/4 cup (60ml)
Milk : 1/2 cup (120ml)
Butter : 2 and 1/2 Tablespoons (40g) unsalted
Egg : 1 large

Filling :

Butter : 3 tbsp, softened
Cinnamon powder : 1 tbsp
Sugar : 1 tbsp
Brown sugar : 1.5 tbsp

Glaze :

Powdered sugar/icing sugar : 1/2 cup
Milk : 1 tbsp
Vanilla : few drops

 

Method :

Prove the yeast by warming the water to about 47 deg C, and add the 2 tsp sugar and yeast. Keep aside for five minutes to activate it.

In the meantime, keep aside 1/2 cup flour add the rest of the ingredients and add the yeast mixture and using your hand / stand mixer/ hand mixer knead it till it turns soft for about 10-12 minutes. Add the 1/2 cup flour from time to time during the knead. We need a soft dough

Oil your hands and move it to a well oiled bowl and let it rise for about 1 hour till it doubles in size

Now deflate the dough by punching it down and on a floured surface make a rectangle of about .75 cm thickness. 

Now, time for filling

Smear the butter to form a layer on the rectangle

Mix the sugars and the cinnamon and spread another layer.

Starting from your side roll the dough away to form a log

Then cut it into 1.5 inch thickness

Line the rolls in a oiled/ greased pan.

Although a second rise is not necessary, it is now i preheat the oven to 190 C and leave the rolls aside for the next 20 mins I cover it with a damp towel.

Now bake them in the oven for 35 mins. If it browns quickly use a foil to cover the top

Once baked and cooled, drizzle the glaze

For the glaze :

Mix the ingredients listed under glaze and drizzle over the rolls once cool

Pull apart the rolls and enjoy
